Yessss! After mami canceled our baking day because she wasn't feeling very good, we finally made the alfajores she had promised a few days ago.
Alfajores are cookies filled with dulce de leche/manjar or caramel. Every country in Latin America has them, but mami says this is the Chilean recipe and the best ones too! And being the good chileno that I am, I followed the recipe very carefully.
So here is what you need:
1/4 cup and 3 tbsp of butter
1/4 cup and 3 tbsp and of sugar
3/4 cup and 3 tbsp of flour
Powdered sugar
1 egg
1 can of condensed milk or dulce de leche/manjar
You can go to any Latin food markets and buy the dulce de leche already made, or you can make your own at home.
To make the caramel you will need to take a can of condensed milk and place the entire unopened can in a large pan. Make sure the water covers the can. Then boil and simmer for two hours. This cooks the condensed milk and makes the manjar!
How to make the alfajor/cookie:
1. Mix together the butter and sugar making it creamy
2. Add the egg and flour
3. Mix all together
4. Take pieces in your hand and place on baking tray and lay them very thin making circles
5. We used a cookie cutter because I wanted to make hearts, but the traditional alfajor should be very thin, much thinner than regular cookies and ROUND
6. Bake at 325 degrees for 12 minutes or until edges get toasty and brown
7. Let cool
8. Then spread the manjar on one alfajor then cover - like a sandwich!
9. Use a strainer to shake powdered sugar on top
10. EAT! Disfruten! Enjoy!
So easy right? Mami doesn't make complicated things so this was perfect for us!
Now I'm going to EAT THEM ALL!
